Patwin Wheat Flour

Patwin is a hard white wheat with high levels of protein, elastic gluten properties and mild flavor. This wheat is best used for breads and an excellent blending flour for other recipes. All our grains are estate grown in California and our flour is small-batch milled. Our 100% whole wheat includes all three nutrition-packed parts of the kernel (bran, endosperm, and germ).
