Patwin Wheat Flour

Patwin is a hard white wheat with high levels of protein, elastic gluten properties and mild flavor. This wheat is best used for breads and an excellent blending flour for other recipes. All our grains are estate grown in California and our flour is small-batch milled. Our wheat is 100% whole wheat and includes all three nutrition-packed parts of the kernal (bran, endosperm, and germ).
