Filet Mignon

Our filet mignon is cut from the loin and one of the most tender of all the beef cuts. Its compact shape creates an ideal cooking surface for an all around even cooking temperature. Wrap in bacon to add some flavorful fat, or serve with mashed potatoes heavy in butter and cream, to make up for the leanness of the meat.
