In Argentina short ribs are known as asado de tira and are thick cut and grilled over an open fire, and that is how the Rancho likes to cook. Another way to enjoy our short ribs is braised or sliced thin and cooked over high heat. Use a dry rub including cumin, black pepper and a little sugar, or go asian style with a soy and honey marinade.
