Skirt Steak

This boneless cut of beef comes from the lower part of the brisket also known as the short plate. Although it can be tough, it is prized for its deep, beefy flavor. Our skirt steak is great for marinating with high acid marinades before grilling or pan frying. Skirt steak is a good choice when craving carne aside or an herbaceous chimichurri sauce. Given that it is super lean, this cut is also perfect for tacos and fajitas. Remember to slice thin and against the grain to avoid chewiness.
