A flat small kidney-shaped bean, green or white in color, Baby Limas are also called Butter Beans in American Southeast cuisine. It has a grainy yet buttery texture, less pronounced in Baby Limas. It was made common as Native North American staple (and considered part of the “three sisters” of beans, corn, and squash) but native to Peru and cultivated for over 7000 years. It's creamy and slightly sweeter than larger Fordhook varietal of Limas.
