Pork Tongue

Pork tongues are more subtle in flavor than beef. At the Ranch we slow boil our tongues in water or stock over a low flame. We like to add garlic and chipotle peppers to further enhance the flavor of the cooking liquid. Once tender, slice thin and brown in a sauté pan for "lengua" tacos.
