All our grains are estate grown in California and our flour is small-batch milled and 100% whole wheat, including all three nutrition-packed parts of the kernal (bran, endosperm, and germ). Considered the hardiest of wheats, Durum is high in protein and golden in hue and the base of most pastas. Great for making breads with more flavor than the commercially produced loafs: try using all ancient grain flour or mixing 50/50 with all purpose flour. Emmer is one of the first domesticated crops, and early cultivation began in the Fertile Crescent, the birthplace of agriculture. Nutty & sweet and high in fiber. Spelt is a natural cross of early cultivated Emmer and a wild varietal of grass from the Near East. Toasty flavor and chewier bite, and high in iron and magnesium.
