Appaloosa

A member of the kidney bean family, one end of the Appaloosa bean is ivory colored and the other end is speckled with purple and mocha. After the distinctive ponies of the Nez Perce Native American tribe, Appaloosa is a native American heirloom, first cultivated near the Palouse River in the area of Eastern Washington & Northern Idaho. Appaloosa is a firm and mild bean that can be used as a replacement for regular kidney beans and holds up to long cook times.
