Ham and Cheese Breakfast Casserole


  • 10 eggs 
  • 1/2 cup all purpose flour 
  • 1 tsp. baking powder 
  • 1 tsp. salt 
  • 2 cups small curd cottage cheese 
  • 1 lb. swiss cheese, grated 
  • 1 cup cubed ham (Llano Seco mini ham or ham steak)
  • 1/2 cup butter, melted 
  • 2 tbsp. chives, divided


  1. Butter a 9 x 13 baking dish 
  2. Crack eggs into a large bowl and beat thoroughly 
  3. Stir and toss the flour, baking powder and salt
  4. Sift dry mixture over eggs and beat until blended 
  5. Mix in the cottage cheese, grated cheese, ham, butter and 1/2 the chives
  6. Pour mixture into the prepared baking dish and place in a 350* degree oven. 
  7. Bake for 35 to 40 minute or until casserole puffs
  8. Garnish with remaining chives 

Serves 10 

For the perfect "puff" we reccomend chilling the mixture overnight. 

You can also start baking in a cold oven, no need to preheat the oven.
