Pork Skin

Pork skin is most commonly used to make crispy, fried chicharrones. We sometimes season a small rectangle portion of skin with fresh herbs, spices and cheese, then roll and tie tight with butcher's twine. Cook this trussed skin in an aromatic tomato sauce to create a classic Italian Braciole de Cotenna.
