Sonora Grain and fresh herb salad

  • 1 lb. cooked Llano Seco Sonora Grains 
  • 2-3 Jimmy Nardello Peppers (or any mild, sweet pepper) 
  • 1/2 bunch cilantro leaves 
  • 1/2 bunch mint leaves 
  • 1 stalk lemongrass, thinly sliced - only slice the bottom 3 inches 
  • 6 kaffir lime leaves, thinly sliced 


  • 1/4 cup lime juice 
  • 1/4 cup rice vinegar 
  • 2 tbls. honey 
  • 3/4 cup neutral oil 
  • Salt and pepper to taste  


    1. Soak grains over night. 
    2. Cook grains in boiling water until desired tenderness, about 1-2 hours. 
    3. Whisk together all dressing ingredients. 
    4. Mix grains, peppers, cilantro and mint leaves, lemongrass and kaffir lime leaves together. 
    5. Drizzle dressing over grain salad. 
    6. Toss salad until fully dressed.
