Sonora Grain and fresh herb salad
INGREDIENTS
- 1 lb. cooked Llano Seco Sonora Grains
- 2-3 Jimmy Nardello Peppers (or any mild, sweet pepper)
- 1/2 bunch cilantro leaves
- 1/2 bunch mint leaves
- 1 stalk lemongrass, thinly sliced - only slice the bottom 3 inches
- 6 kaffir lime leaves, thinly sliced
Dressing
- 1/4 cup lime juice
- 1/4 cup rice vinegar
- 2 tbls. honey
- 3/4 cup neutral oil
- Salt and pepper to taste
DIRECTIONS
- Soak grains over night.
- Cook grains in boiling water until desired tenderness, about 1-2 hours.
- Whisk together all dressing ingredients.
- Mix grains, peppers, cilantro and mint leaves, lemongrass and kaffir lime leaves together.
- Drizzle dressing over grain salad.
- Toss salad until fully dressed.
