This favorite cut just got a whole lot easier. Our porchetta, the deboned belly and loin, has been rolled with toasted fennel, meyer lemon zest, chili flake, garlic and salt. We tied it tight and left the skin on for crunchy crackling. Preheat your oven to 350 degrees F and roast, on an oven rack, for 2 hours or until the loin reaches an internal temp of 150 degrees F. Let rest for 10-15 minutes, slice and enjoy.
