Trotters, or the pork foot and hoof, are traditional in Chinese, Korean, European and Caribbean cuisines. Our trotters come two-per-pack and are full of collagen that will break down and add a velvety texture to soups, stews or braises when simmered for hours. At the Rancho we like to debone our trotters, stuff them with sausage and roast them in the oven.
